Building upon Villa Nord's rich history is a deliberate choice to craft memorable experiences for our guests. Our bar carries the heritage of Dronningens street where generations of artisans, artists, and hoteliers have left their mark ever since Arnt and Ingeborg Flengstad established Trondheim's first hotel in 1837. Honest craftsmanship shines through whether keeping the classics timeless or experimenting with new creations.
"Bespoke 1837" invites you to dimmed lighting and late hours, offering a cozy end to the evening shaped by local produce from our finest partners.
The menu unfolds like a book in several chapters, with "The Bitter Trade" taking center stage as a bold journey through the Negroni, served alongside house-selected bar snacks.
Signature bar snacks, prepared with love
The signature bar snacks are brought out all evening beside the bar. Small shrimp from Trøndelag are crisped and eaten by hand, dusted with truffle and Lofoten seaweed.
The oysters are dressed by our own hand, with gels pressed from fruit and vegetable, a quiet study in flavour, touch and texture.
Honouring the seasons
The programme flows with the seasons: Trondheim heritage ingredients, French technique, Mediterranean flavour. What grows, swims or ripens near the city decides what is poured.
Alongside the kitchen, pairings for every drink can be enjoyed, an all-round experience for our guests.
In service of our heritage.
With thanks to Kristian Fila, our Head Chef, and Panos Papaioannou, our Sous Chef, for the that shaped this menu.
